Rarebird is a moment on pasture made funky. We craft it in wee batches, washing it with a salt solution over two months as we steward the cheese to proper au point ripeness. The result is a beefy hunk of cheese with a heady array of savory flavors and texture that ranges from buttery to custardy. Flavors range from roasted peanuts or hazlenuts to bacon cheeseburger, soy sauce, long-simmered beef broth, caramelized onions, and shallot.

Storage
Store wrapped in cheese paper in a humid part of your refrigerator, such as the crisper drawer. Mold growth is natural and safe, but you can wipe it off of the rind with a paper towel or some cheesecloth and a little salty water if it bothers you.
